Ooh no posts for a while, I didn’t realise I’d been gone that long…..

 Here’s a little something that I’ve been making over the last couple of days, and yay it’s all for me! I was inspired by the amazing work of Sherry Serafini and just got the book she’s written with the equally talented Heidi KummliThe Art of Bead Embroidery – fantastic! It’s my first proper attempt at freeform bead embroidery and apart from a couple of areas I wish I’d done differently, I’m really pleased with how it’s turned out. The two stones are tiny agate cabochons. I had absolutely no plan apart from wanting to make a crescent moon and maybe using grey beads. I started off by glueing down the larger cab and then went from there. I didn’t intend to use both, it just kind of happened! Thanks for looking, I hope you like it as much as I do.

Cookies!

Look what I made today – coconut cookies! I’ve never made cookies before so I’m quite pleased with myself ! I’m not a very good cook to be honest, I can do the basic stuff and that’s it. But I used to make cakes a couple of time a week when I was younger and I really miss doing that. My few attempts since then have been a bit rubbish but seeing how these turned out today, I’m going to make sure I do a lot more baking in future. Oh and they are DELICIOUS in case you were wondering! Crispy on the outside and slightly cakey on the inside. I’m not sure if they’re supposed to be cakey on the inside but they’re delish anyway ; )

Here’s the recipe if you fancy making some of these, they’re really quick and easy. I halved the recipe to make this batch plus a few smaller ones that were still baking when I took the photo.

Crunchy Coconut Cookies

1 large egg
60g Stork margarine, softened
75g desiccated coconut
125g caster sugar
150g self-raising flour

1. Mix the sugar and the margarine together until smooth.

2. Add the egg and mix until smooth and creamy.

3. Add the desiccated coconut and mix well.

4. Add the flour, making a dry-ish dough. If it’s too sticky add more flour.

5. Break off pieces of dough, roll into balls then flatten to about 1cm thick.

6. Dip them top and bottom into more coconut and place on a greased baking tray.

Bake on Gas Mark 4 in the centre of the oven for about 10 minutes or until light golden brown. Leave to cool on a wire rack and then eat!

The original recipe is here – I omitted some of the ingredients and used regular self-raising flour instead of the gluten-free plain flour.
